  1. In a large non-stick fry pan put your stock, onion, tomatoes and zucchini and cook on a low heat to soften. In the meantime whizz up your egg whites to soft peak and then stir in your whole egg. Add to pan and cook for about 3- 4 minutes you will then finish it under the grill for another 3 minutes. Serve on large plate and dust with chopped parsley.
