Instructions
  1. Season your fish and grill or cook in a non stick pan. Put aside to cool.
  2. Take you dill, parsley, chives and coriander and put through your food processor until finely chopped.
  3. Flake your fish.
  4. Combine your fish, chopped herbs, lemon zest, lemon juice, torn mint leaves and season to taste.
  5. Serve in a glass jar or in lettuce cups.
